Owned and operated by Chefs Will Bradof and Paul Wireman of Local restaurant and Bar and Trio an American Bistro, Local Butcher is Jackson’s newest farm to table butcher shop and delicatessen.

Located around the corner from Local,  Local Butcher offers locally sourced grass fed beef, house smoked meats, fresh sausages, custom meat cuts, fresh pastas, soups, sandwiches, salads, cheeses and a full selection of prepared foods often found on the menus of Trio and Local. Inspired by Old World style shops, Local Butcher offers a wide selection of charcuterie items made in house and uses a state of the art prosciutto slicer invented over 100 years ago to slice its cured meats paper thin. Whether grabbing a quick lunch, supplies for your next dinner or selecting a perfect steak for the grill Local Butcher has you covered.

Our Team

WILL BRADOF
Executive Chef/Owner

Upon graduating from Colgate University, Will established his connection to Jackson while cooking in a number of local establishments. Deciding he wanted to take his skills to the next level, Will enrolled at the Culinary Institute of America. After graduation, with apprenticeships in Tuscany, Italy, and at Tra Vigne restaurant in Napa, CA, Will returned to Jackson for a position at the Snake River Grill. Will quickly became one of the Snake River Grill’s integral chefs, spending a year and a half developing his unique style and technique, before opening Trio.

PAUL WIREMAN
Executive Chef/Owner

Following the completion of a degree in Business Management and Nutrition at Harding University in Searcy, Arkansas, Paul held a number of cooking jobs throughout the northern Midwest before settling in at the Palomino Restaurant in Minneapolis. After working at the Palomino as a lead cook, Paul moved to the Jackson area in the summer of 2003. Paul joined the Snake River Grill and was soon an essential member of the kitchen staff. In the summer of 2005 he left to open Trio.

MICHAEL CHRISTIE | Executive Catering Chef

Michael was born in Scotland and has traveled through out Europe, New Zealand and the United States.  He has 29 years of culinary expertise, bringing his passion for cuisine to the downtown Old World inspired Jackson Market.
